Toasted "Million Dollar" Muesli

Despite being cheekily dubbed by my aunty as "Million Dollar Muesli", this recipe can be enjoyed by the most resourceful of home cooks as it lends itself perfectly to the half used packets of nuts that find themselves in the quiet, dark corners of the pantry.

I love to add a variety of nuts, seeds and chopped dried fruit to my muesli for texture and flavour. There will be no cardboardy cereal here. If you want to adjust the sweetness you can by simply reducing the amount of honey or dried fruit added. Ground cinnamon or nutmeg would be the perfect addition if you like to mix things up. It really can be as simple or as gourmet as you like.

If you have added lots of nuts, be careful with portion size as they are quite energy dense - start with about 1/4 to 1/2 cup as a guide. This smaller portion will fill you up just as much as nuts are high in protein and fibre.

Store in an airtight container for several weeks, ready to serve with natural Greek yoghurt and some fresh fruit for a delicious breakfast or snack.

Toasted Muesli

Makes 1 large baking tray

Ingredients:

4 cups rolled oats

1/4 cup wheat germ

1/4 cup shredded coconut

2 cups nuts, roughly chopped (e.g. almonds, brazil nuts, hazelnuts, macadamia nuts)

1/2 cup seeds (e.g. white and black sesame seeds, peptita seeds and sunflower seeds)

1 cup dried fruit, roughly chopped (e.g. apricots, cranberries, figs)

1/2 cup vegetable oil

1/2 cup honey

1 tsp vanilla essence

Method:

  1. Preheat oven to 140°C. In a large non-stick baking tray add oats, wheat germ, coconut, nuts and seeds (do not add dried fruit at this stage).

  2. Add oil, honey and vanilla essence to a heat proof bowl and microwave slowly for approximately 30 seconds until honey combines with the oil. Drizzle over oat and nut mixture and stir until all ingredients are lightly coated.

  3. Bake oat and nut mixture in oven for 40 minutes, stirring once or twice. Remove from oven and stir through dried fruit. Once cooled, store in an airtight container.
